An Amazing Acai Bowl in Brighton

I know, I know. Acai bowls aren't necessarily a Brighton "staple", but many of the beachside cafe's serve them as a nutritious and delicious seaside treat. I sure had my fair share of acai bowls while visiting! Packed with superfoods like chia seeds, strawberries, bananas, blueberries, and a touch of chocolate, this bowl is not only delicious but also loaded with essential nutrients and antioxidants. Whether you're a health enthusiast or simply looking for a delightful breakfast or snack option, this recipe will satisfy your cravings and leave you feeling energized.

  • 2 frozen Acai berry packets

  • 1 ripe banana

  • 1 cup frozen strawberries

  • 1/2 cup frozen blueberries

  • 2 tablespoons chia seeds

  • 1 tablespoon cacao nibs or dark chocolate chips

  • Fresh strawberries, sliced (for garnish)

  • Fresh blueberries (for garnish)

  • Granola (optional, for topping)

  • Honey or maple syrup (optional, for sweetening)


Step 1: Prepare the Acai Bowl Base

  1. In a high-speed blender, combine the frozen Acai berry packets, ripe banana, frozen strawberries, and frozen blueberries.

  2. Blend the ingredients until you achieve a smooth and creamy consistency. If needed, add a splash of liquid such as almond milk or coconut water to help with blending, but be careful not to add too much, as you want a thick texture.

Step 2: Incorporate the Chia Seeds

  1. Transfer the Acai bowl base into a bowl or serving dish of your choice.

  2. Sprinkle the chia seeds evenly over the top of the Acai mixture.

  3. Gently stir the chia seeds into the Acai base to ensure they are well-distributed.

Step 3: Add the Fruit Toppings

  1. Slice a few fresh strawberries and set them aside for garnish.

  2. Slice the remaining ripe banana into rounds and place them on top of the Acai bowl.

  3. Sprinkle a handful of fresh blueberries over the banana slices.

  4. Arrange the sliced fresh strawberries on one side of the bowl.

  5. Optionally, you can add some additional blueberries and sliced banana for extra flavor and visual appeal.

Step 4: Finishing Touches

  1. Sprinkle the cacao nibs or dark chocolate chips over the Acai bowl.

  2. If desired, drizzle a small amount of honey or maple syrup for added sweetness.

  3. For an extra crunch, sprinkle some granola on top.
